I like to have the actual celery and onions in the recipe just to give the soup more texture but I'm sure it is delicious either way. For this recipe I cut the carrots up myself, which is a little time consuming. Did the grated carrots work out? To cut the preparation time I don't see why you couldn't use the grated carrots.
